To prepare the filling:
Put the sugar and water in a saucepan over a high heat and stir to dissolve the sugar and start the water to boil. Let the pot boil until we get a thick mixture, then remove the saucepan from the heat.
Hatch the eggs and separate the yolk from the white. Beat the eggs well, then gradually add 2/3 the amount of sugar to them, with rapid and continuous stirring. Add vanilla to the egg yolks and beat well. Pour the remaining third of the sugar mixture gradually and continue whisking well until we get a soft mixture. We melt the chocolate and butter by placing them in a water bath, where we put them in a small bowl and place it over another bowl filled with hot water.
Add cocoa powder and stir until the cocoa melts. Add the chocolate mixture to the egg yolk and beat again and well. We add the egg white mixture to the chocolate mixture gradually and keep whisking well.
To prepare the dough:
Put the flour and butter in the bowl of an electric mixer and beat the ingredients. Gradually increase the speed of the beater until we get a sandy texture and collect the resulting dough, taking care not to rub it. Add the powdered sugar, almond powder, and cocoa and mix the ingredients well.
Put the eggs and mix the ingredients again and well. We remove the dough from the whisk and form a circle. Cover the dough with nylon paper and put it in the refrigerator for half an hour.
We turn on the oven at 170 ° C. On a table top, roll out the dough, then place it on the tray and spread it out completely.
We put the tray in the oven and leave it until it is browned and cooked well. We take out the tray from the oven and let the pie cool down.
Pour the filling mixture and smooth the surface with a knife. We put the tray in the refrigerator and leave it until the pie cools and becomes firm. Take the tray out of the refrigerator and put it on a serving plate and serve it cold.
